Ingredients:
- 2 teaspoons vegetable oil
- 1 cup chopped onion
- 2 teaspoons minced garlic
- 2 (15-ounce) cans white cannellini or Great Northern beans, drained
- 1 (4-ounce) can diced green chilies
- 1 cup frozen corn kernels
- 1/2 cup grated carrot
- 1/4 cup diced celery
- 1 cup low–sodium chicken broth
- 1 tablespoon ground cumin
- 2 teaspoons chili powder
- 1/2 teaspoon salt (optional)
- 2 cups fat-free or low-fat milk
- 1 tablespoon cornstarch
- 1 cup shredded reduced-fat Cheddar cheese, divided
- 4 tablespoons fresh chopped cilantro (optional)
